Hi! Today I’m here with another recipe, it’s an easy and no-oven cheesecake recipe, I’ve made it a couple of times and people like it, so I thought I could share it here too! I like cheesecakes but with this weather some days turning on the oven is suicide, so I made a non-bake cheesecake using agar agar to give it consistency and it has turned out quite good, it’s creamy and delicious, I hope you enjoy it!

Basic cheesecake

Ingredients

For the crust:

  • 100 gr Nuts (hazelnuts, walnuts, almonds…)
  • 7 gr Erythritol
  • 15-20 gr Coconut oil

For the filling:

  • 400 gr Cream cheese
  • 200 ml Heavy Cream
  • 50 gr Erythritol
  • 1 tsp Vanilla
  • 4 gr Agar agar

Instructions

  • Grind the nuts and mix them with the coconut oil and the erythritol, and spread the paste on the base of a detachable mold. Put it on the fridge while we prepare the filling.
  • Whisk together the cream cheese with the erythritol and the vanilla.
  • Put the heavy cream in a pan over medium heat until it starts simmering, then take it out of the heat and add the agar agar mixing it well. Add it to the cream cheese mixture and pour the batter in the detachable mold, over the nut base.
  • Refrigerate for a few hours, or preferably overnight, and then carefully unmold and add any jam you like on top, I added strawberry jam but you can use any other (or none).
