The other week I bought a bunch of lemons because I wanted to bake something, but I’d never baked with lemons before, and I didn’t know what to do, so I decided to make something small and simple and I made these lemon cakes that were delicious! Lemon cakes

Ingredients
- 3 Lemons
- 60 gr Erythritol
- 125 gr Butter, softened
- 2 Eggs
- 80 gr Oat flour
- 2 tsp Baking powder
- 2 tbsp Milk
Instructions
- Preheat the oven to 180ÂșC.
- Mix the softened butter with the erythritol and the zest of one lemon. Then add the egg yolks, beating well. Whisk egg whites in another bowl until stiff peaks form.
- Add the flour, baking powder, milk and two tablespoons of lemon juice and mix everything well. Then, using a spoon, fold the egg whites into the mixture
- Grease a muffin pan, cut thin slices of lemon and coat them with erythritol. Put the coated slices in the pan holes and fill them with the batter to 3/4 of their capacity.
- Bake for 20 minutes, then let them cool for 10-15 minutes before unmolding, then unmold and enjoy!
